Salt & pepper. 1 quart chicken broth. ⅔ cup pearled barley. 1 cup lowfat milk. Heat a soup pot over medium heat. Add the bacon and cook until crisp.

Preparation. Step 1. Bring 4 cups water, 2 cups broth, barley, and 1 scant teaspoon sea salt to boil in large pot. Reduce heat to medium-low, cover, and simmer until tender, about 40 minutes.

Reduce heat and simmer for approx. 1 hour. Season. 2. Prepare soup approx. 1 day in advance; allow to cool and keep in fridge, covered. Prepare soup without the Graubünden air-dried meat.
