Marian created her mini houses with a cinnamon salt dough recipe. This gave the houses a pretty gingerbread appearance. I wanted to try a lighter house (much like the beautiful sugar cookie house from Zoë François). I went with my standard salt dough recipe and used maybe 2/3 of the dough to cut five houses (and the bases) with scraps leftover.

Preheat oven to 350 degrees. On a lightly floured surface, roll out gingerbread dough to about 1/8 inch thick. Chill until firm, about 1 hour. Lightly dust top of dough with flour. Place templates on top, and cut out shapes with a paring knife. (Use a small utility knife to cut out the windows.) Transfer to parchment-lined baking sheets.

Step One: Make the Dough. 1. Create cardboard templates using the shapes shown above. The side parts on the left should be 7 1/2 inches by 3 1/2 inches. Cover the dough in plastic wrap or sealed in plastic bags. Chill for at least 30 minutes or until firm. Preheat the oven to 375 degrees. Roll out the dough and use cutters to create the different star shapes. Prepare a baking sheet with parchment paper and place the gingerbread pieces on the prepared sheets to bake.

In the bowl of a standing mixer, beat the butter on medium speed until smooth. Beat in the brown sugar until combined.
