Let steep for 1 hour. Position a rack in the lower third of an oven and preheat to 350°F (180°C). In a large ovenproof pan over medium-high heat, warm 1 Tbs. of the oil. Add the chicken and sear, turning as needed, until golden brown on all sides, about 10 minutes. Sprinkle with 1/4 tsp. salt and transfer to a plate.
